Description
White borage (Borago officinalis alba), also known as white starflower, is a striking and uncommon variety of the classic borage herb distinguished by its pure white, five-pointed star-shaped flowers instead of the more familiar blue. Like its blue counterpart, it carries the same characteristic cucumber-like scent and flavor in both its leaves and blossoms, offering a refreshing, cool, and mildly peppery taste that makes it a favorite edible flower and herb. The delicate white blooms are especially prized for garnishing salads, soups, desserts, drinks, and charcuterie boards, where they add elegance, subtle flavor, and visual contrast. Fresh leaves can be used in the same ways as traditional borage—chopped into salads, blended into herbal teas, or added to cool summer beverages for their cucumber-esque refreshment and reputed soothing qualities. White borage has long been valued in herbal traditions for its gentle, cooling properties and has been used in teas and infusions believed to support relaxation and mild digestive comfort. Its flowers are equally attractive to bees, butterflies, and other pollinators, providing nectar and pollen while bringing a softer, luminous look to pollinator gardens, cottage-style plantings, and ornamental edible landscapes. The blooms hold up well when cut for fresh arrangements and can be crystallized with sugar to create decorative, edible cake and pastry toppers. Dried leaves and flowers retain much of their aroma and can be stored for use in herbal blends or tisanes throughout the year.
